Can Cypress expert tell me which device protocol is running more reliable ? U3V is more reliable than UVC protocol?

Hi,
When comparing these two, the reliability actually depends on individual user implementation of the application. You can use either of these.
From our own experience, we feel UVC is easier to implement in FX3, because of the less firmware and state machine complexity, and readily available examples.
We do have success stories of many customers who implemented U3V in FX3
