As the IKW30N65ES5 D/S spec shows, the collector current at Tc 125 degrees is 30A, right?

yes, you are allowed to draw 30A collector current at a case temperature of 125DegC until the junction temperature of the device has not reached to maximum rated value of Tvj 175 DegC. with your designed Power loss on the device.
