My links to the reference manuals are all old (Cypress) and broken.

When I search either Infineon or the community all that comes up are PSoC 4, PSoc 6, etc. , or links that don't work.

Where can I go to read/download them?

Hello.

Here's the link for 5LP datasheet.  A quick "google" search finds it immediately.
PSoC® 5LP: CY8C58LP Family Datasheet Programmable System-on-Chip (PSoC®) (infineon.com)

Once you download/open that pdf, there are links to more pdfs in the "More Information" section: for the Arch. TRM and Register TRM.  And the 5LP Programming Spec (should you need it).

For a ton of more 5LP related doc's:
32-bit PSoC™ 5 LP Arm® Cortex®-M3 - Infineon Technologies
lots of app notes, KITs, etc.
