For the part numbers above (the BS 160 series fet), the only differences in the part number are the 'Z' vs 'C' which denotes packaging size.
That being the case, are these two parts the same MOSFETs (i.e the same die) but in different packaging?

As you well explained, the main difference between the two parts is the package.
We cannot go into details of the die, but I can confirm that it is the same for both versions.
However, please note that even if the die is the same, some parameters of the datasheet differ from the BSC version to the BSZ.
Examples would be avalanche energy (mainly due to a difference in the test conditions) and Rth_ja (due to difference in package).

Intrinsic parameters such as parasitic capacitances are the same.
